Half of the grapes are destemmed and macerated for 10 days, then pressed. It is aged for one year before bottling. Although it has rather grippy tannins, it has a smooth softness at its core, a slight effervescence, and pleasant woody character. A very rare and delicious wine!

Audrey Pilorget

Audrey Pilorget was a winegrower for 20 years in Alsace when she was married to Christian Binner. After a 9 year interlude as a wine merchant in Paris, she returned to her original love by settling in the Loir-et-Cher.

Since 2019, she has been making wines without any additives, from organic, biodynamic, and above all non-interventionist agriculture.

All the wines are vinified without any chemical or mechanical intervention (no racking, no sulfites, no filtration). Long maturation is the rule: between 18 months and 2 years for the whites and one year for the reds.
